Max HP
Max HP is your health bar, it is the amount of damage you can take before dying. You can increase this by buying Items from Shop. Some Characters starts with extra Max HP.
Every Character starts with 10 Max HP by Default, and gain +1 Max HP when leveling up.
If you reduce your Max HP to 0 or lower, like you can while playing Demon you will still have 1 Max HP when you start the next wave.
Max Health Cap
If you buy the item Handcuffs, your Max HP will be locked at its value when you bought the item. You can still increase or decrease your Max HP, but when you enter the game, your health bar can't be higher than your Max Health Cap.
Even if you buy Handcuffs at 100 Max HP, HP Scaling Items and Weapons like Alien Eyes, Potato Thrower, and Chopper can still scale beyond 100 Max HP. The cap only affects your HP Bar.
The game has a natural Max Health Cap of 999999, or just shy of a million Max Health. That is the maximum amount of health you can have. But scaling items like Potato Thrower can still scale with values higher than this limit. You are unlikely to encounter this limit unless you play a Modded version of the game, or are playing Endless Mode.
